Chicken nuggets with coconut recipe details
Ingredients
2 | cucumbers, sliced |
1 | ripe orange, juice |
1 | onion, chopped |
1 | red chili pepper, seeded and sliced |
4 | chicken tenderloins, cut into stripes |
2 | eggs |
4 tbsp | milk |
4 tbsp | breadcrumbs |
100 g | shredded coconut |
3 sprig(s) | cilantro, chopped |
3 tbsp | white balsamic vinegar |
salt and pepper | |
sugar | |
3 tbsp | olive oil |
6 tbsp | flour |
4 tbsp | sunflower oil |
Instructions
In a bowl, mix together the orange juice and the vinegar. Season to taste with salt, pepper and sugar. Stir in the chili, onion and olive oil. Add the cucumbers and allow to soak for 30 minutes. Stir in the cilantro and season to taste with salt and pepper.Beat the eggs into a bowl and slightly whisk in the milk. In a deep plate, mix together the breadcrumbs and the shredded coconut. Season the chicken stripes with salt and pepper. Turn the stripes first in the egg mixture and then in the breadcrumb and coconut mixture. Make sure, the stripes are well coated.
In a pan, heat the sunflower oil. Stir-fry the chicken stripes for 6-8 minutes until golden and crispy.
Serve with the cucumber salad.
