INGREDIENTS:

Makes 150

150g butter

100g icing sugar, sifted

2 eggs

250g superfine/cake flour, sifted

1 tsp baking powder, sifted with flour

100g cashew nuts, fried and ground

Topping

Halved cashew nuts


METHOD:

  1. Preheat oven at 180 deg C.

  2. Beat butter, icing sugar and egg until light and creamy.

  3. Fold in flour, baking powder and ground cashew nuts and mix well to form a soft dough.

  4. Lightly flour working surface and dough. Roll dough to a 5mm thickness.

  5. Use a cookies cutter or a cookie press to press dough into crescent shape. Place cookie dough on greased baking tray.

  6. Press a half cashew nut on top of each cookie for decoration. Brush cookies with egg glaze.

  7. Bake in preheated oven for 10-15 minutes until golden brown. Cool on wire racks before storing in airtight container.
