Cashew nut cookies details
INGREDIENTS:Makes 150
150g butter
100g icing sugar, sifted
2 eggs
250g superfine/cake flour, sifted
1 tsp baking powder, sifted with flour
100g cashew nuts, fried and ground
Topping
Halved cashew nuts
METHOD:
- Preheat oven at 180 deg C.
- Beat butter, icing sugar and egg until light and creamy.
- Fold in flour, baking powder and ground cashew nuts and mix well to form a soft dough.
- Lightly flour working surface and dough. Roll dough to a 5mm thickness.
- Use a cookies cutter or a cookie press to press dough into crescent shape. Place cookie dough on greased baking tray.
- Press a half cashew nut on top of each cookie for decoration. Brush cookies with egg glaze.
- Bake in preheated oven for 10-15 minutes until golden brown. Cool on wire racks before storing in airtight container.
