Ingredients
4 | shallots |
60 g | butter |
2 | apples, e.g. Bramley or Boskoop |
2 tbsp | sugar |
3 tbsp | Calvados |
4 slice(s) | calf’s liver, 125g each |
flour | |
2 tbsp | vegetable oil |
salt and pepper |
Instructions
Peel the shallots, cut in rings and sauté in a little butter. Remove from the pan, set aside and keep warm.
Core and (if desired) peel the apples, then slice in rings. Heat the remaining butter and lightly caramelise the sugar. Add the apple rings and caramelise them on both sides. Deglaze with the Calvados and add the shallots.
Rinse the liver, pat dry and turn in some flour. Sear the liver slices over high heat shortly, turning just once.
Transfer the liver to heated plates, season just now with salt and pepper, add some apple and shallot rings and serve immediately, along with mashed potatoes.
