Brazilian bundt cake recipe details
Ingredients
butter and breadcrumbs for the baking tin | |
For the dough: | |
3 | limes, grated rind and juice |
6 | eggs, separated |
1 pinch(es) | salt |
50 g | sugar |
300 g | soft butter |
200 g | soft sugar |
100 ml | Cachaša |
350 g | flour |
1 tsp | baking powder |
100 g | corn starch |
For the Icing: | |
2 tbsp | apricot jam |
1 | lime, grated rind and juice |
2 tbsp | sugar |
150 g | icing sugar |
1 tbsp | Cachaša |
Instructions
Preheat the oven to 175░C. Butter the Bundt tin and coat with breadcrumbs. Set in a cool place.Whisk the egg whites with a pinch of salt until stiff, while trickling in the sugar. Set aside one tablespoon of the beaten egg white for the icing.
Beat the butter and the soft sugar until creamy. Fold in the egg yolks one at a time, then the rind and juice of the limes, finally the Cachaša. Fold in the beaten egg whites, sieve the flour, baking powder and the corn starch on top and fold in.
Spoon the dough in the Bundt tin and bake for 55-60 minutes. Allow to cool slightly, then turn the cake on a wire rack and remove the tin.
Heat the apricot jam and spread on the cake. Allow to cool completely.
Combine the lime rind with the sugar. Stir together the icing sugar, the tablespoon of the beaten egg white, the lime juice and the Cachaša until smooth. Spread the cake with the icing and garnish with the lime rind.
