Ingredients

15 ounce(s) chopped pineapple, tinned
4 ounce(s) butter
4 ounce(s) brown sugar
8 ounce(s) sultanas
4 ounce(s) glacÚ cherries, chopped
4 ounce(s) dates, chopped
1 tsp bicarbonate of soda
2  eggs, beaten
4 ounce(s) self raising flour, well sifted
4 ounce(s) plain flour, sifted
salt

Instructions

Place the contents of the tin of pineapple, the butter, the sugar and the rest of the fruit in a saucepan and simmer for 15 minutes.

Add the bicarbonate of soda and leave the mixture to cool. When cold, stir the beaten eggs into the fruit, followed by the two flours and the salt, and stir to get a batter. Pour the batter into an 8 inch cake tin and bake in the oven at 350░F, 180░C for 1,5 to 1,75 hours.

When cooked, cool on a rack and serve for tea.
