There is a local pizza place here and I just happen to have the recipe. Or at least real close. Believe me, it’s awesome. 🙂

Ingredients
Serves: 12- 1 1/2 cups water (1 cold and 1/2 hot)
- 1/4 ounce yeast (1 packet)
- 7 cups unbleached flour
- 1 1/2 teaspoon salt
- 2 tablespoons olive oil
Preparation method
Prep: 1 day | Cook: 15 mins1. Mix 1 cup cold water and 1/2 cup hot water together. Add yeast. Let yeast work for about 10 minutes
2. In large bowl add 2 cups of flour, yeast mixture, salt and oil. Mix on medium for 2 minutes. Put dough hook on mixer and add flour slowly until dough starts to pull away from sides of bowl. Dough will be slightly sticky. Mix with dough hook 5 minutes then transfer to lightly greased bowl. Flip dough over so the top is oiled and then cover.
3. Let rise until doubled. Roll out to about 1/4 inch thick. Let rise again until a piece of dough floats in water. Divide into soft ball size pieces. Roll each one out to fit pizza pan. Should be no thicker than 1/4 inch. Put in fridge over night.
4. Next day, Preheat oven to 425 degrees F (220 degrees C). Fork top of dough and top with sauce and favorite ingredients.
5. Bake for 12 to 15 minutes or until golden. Enjoy!
