Beef tenderloin with tomatoes and balsamic butter recipe details
Ingredients
200 g | tomatoes, diced |
sugar | |
1 sprig(s) | basil, chopped leaves |
4 | beef tenderloin steaks, thick cut |
salt and freshly ground black pepper | |
1 tbsp | oil |
100 ml | balsamic vinegar |
100 g | butter, cold |
2 tbsp | freshly grated Parmesan cheese |
Instructions
Bring the vinegar to a boil and cook until reduced to half. Stir in the butter and whisk until creamy.Season the meat with salt and pepper. In a pan heat the oil and fry the steaks over high heat for 3 minutes each side or until desired doneness. Remove from the pan and keep warm.
Sauté the tomatoes in the pan for 2-3 minutes. Season to taste with salt, pepper and sugar. Fold in the basil.
Serve the steaks with the tomatoes and the balsamic butter, sprinkled with Parmesan cheese.
