Beef bouillon with sponge diamonds recipe details
Ingredients
1 l | beef bouillon, see my recipe in the database |
For the sponge diamonds: | |
2 | eggs, separated |
1 tsp | milk |
50 g | ham, finely chopped |
1 tbsp | parsley, finely chopped |
60 g | plain flour |
1 pinch(es) | freshly grated nutmeg |
Instructions
Beat the egg whites until stiff. Preheat the oven to 180°C.Cream the butter and add, stirring constantly, egg yolks, milk and flour. Add ham and parsley, a pinch of nutmeg and stir until well combined. Fold in the beaten egg white.
Spread the batter about 0,5mm thick onto a lined baking tray (you will cover just a part of the tray) and bake for approximately 20 minutes, or until golden. Leave to cool, then cut into diamonds of approximately 3cm length.
Divide into the soup plates and pour over the hot bouillon.
Note:
You may substitute 50g hard cheese for the ham.
