Bean and pasta salad recipe details
Ingredients
250 g | green beans |
salt and freshly ground black pepper | |
150 g | pickled roasted bell peppers, diced |
1 | red onion, sliced |
40 g | pine nuts, toasted |
1 bunch(es) | rocket |
6 tbsp | oil |
250 g | pasta of your choice |
100 ml | vegetable stock |
8 tbsp | white balsamic vinegar |
Instructions
Cook the pasta in salted water until al dente, then drain. Cook the beans in salted water for 8-10 minutes. Drain and allow to cool.In a saucepan, mix together the vinegar and the stock. Whisk in the oil. Season to taste with salt and pepper and bring to a boil.
In a salad bowl, mix together the cooked pasta, beans, onion and bell peppers. Mix with the dressing and allow to soak for 1 hour.
Check seasoning and correct if necessary. Fold in the rocket and the roasted pine nuts.
