Bay and rosemary studded rooster potatoes recipe details
Ingredients
12 small | rooster potatoes |
24 | bay leaves, halved |
6 sprig(s) | rosemary |
150 g | butter, slightly softened, cut into 12 pieces |
salt and freshly ground black pepper |
Instructions
Cut each potato across its width in slices half way into the pulp. If you place the potatoes onto a spoon, it is easier not to cut through. Insert halved bay leaves and small rosemary sprigs into the slices. Season the potatoes with salt and pepper.Cover the bottom of a casserole dish with water. Place the potatoes side by side upright into the casserole and gently press a piece of butter onto each potato.
Bake the potatoes in the preheated oven at 200°C until golden and tender, basting occasionally with the melted butter and water mixture.
These potatoes make a delicious accompaniment to roast poultry and other roasts.
