Ingredients
500 g | lean pork, ground |
500 g | lean veal, ground |
200 ml | pork fat |
3 slice(s) | white bread with crust, crumbled or finely chopped |
1 tsp | salt |
5 tsp | black pepper, ground |
5 tsp | cayenne pepper |
25 tsp | mixed grated nutmeg and mace |
25 tsp | thyme, dried and crumbled |
1 tsp | sage, dried and crumbled |
1 tsp | finely grated lemon peel |
1 large | egg(s) |
For the Mash: | |
1 kg | potatoes |
Instructions
Knead together the pork, veal, fat, and bread.Mix salt, pepper, cayenne, nutmeg and mace, thyme, sage and lemon peel into the egg, then knead into the meat mixture.
Firmly stuff the mixture into prepared hog casings. Poach, braise, or fry them in a frying pan.
Serving suggestion:Serve with mashed potatoes and minty peas.
