Ingredients

500 g lean pork, ground
500 g lean veal, ground
200 ml pork fat
3 slice(s) white bread with crust, crumbled or finely chopped
1 tsp salt
5 tsp black pepper, ground
5 tsp cayenne pepper
25 tsp mixed grated nutmeg and mace
25 tsp thyme, dried and crumbled
1 tsp sage, dried and crumbled
1 tsp finely grated lemon peel
1 large egg(s)
For the Mash:
1 kg potatoes

Instructions

Knead together the pork, veal, fat, and bread.

Mix salt, pepper, cayenne, nutmeg and mace, thyme, sage and lemon peel into the egg, then knead into the meat mixture.

Firmly stuff the mixture into prepared hog casings. Poach, braise, or fry them in a frying pan.

Serving suggestion:Serve with mashed potatoes and minty peas.
