Banana Pancake with a Pinch of Cinnamon recipe

|4 medium||eggs, separated|
|3 medium||bananas, pureed|
|1 tsp||vanilla extract|
Mix the egg whites until they are stiff and place in the fridge.
In another bowl mix together the milk, egg yolks and flour, then add the pureed banana and mix again well. Add cinnamon, vanilla and mix well.
Melt butter in a large frying pan.
Fold 4 tablespoons of the egg white into 240ml of pancake batter and then pour into the frying pan.
Cook for approximately until golden brown, 2-3 minutes. Repeat with remaining batter and egg whites.
