Baked salmon with a creamy avocado sauce recipe details
Ingredients
1 large | avocado, ripe |
1 clove(s) | garlic, crushed |
1 | spring onion, chopped |
5 ml | sherry vinegar |
200 ml | crème fraîche |
6 | fresh salmon or kingklip steaks |
6 sprig(s) | fresh tarragon, or use dried |
65 ml | white wine |
To serve: | |
some | parsley |
1 | ripe avocado, sliced |
Instructions
Place the flesh of the avocado in a food processor or blender along with the garlic, spring onions, vinegar and seasoning to taste. Process until smooth. Transfer to a mixing bowl and add the crème fraîche. Cover and refrigerate for 30 minutes.Lay a large sheet of tinfoil in a shallow baking tin and place the fish on the foil. Top each piece with a sprig of tarragon. Season to taste and drizzle with the white wine. Fold the foil over and seal closed.
Bake on the highest shelf in a preheated oven for about 10 minutes, depending on the thickness of the fish. Remove from the oven, open the foil and discard the herbs. Serve the fish with the avocado sauce, garnished with slices of avocado and flat-leaved) parsley.
