Ingredients
2 medium | zucchini |
1 medium | avocado, seeded, peeled and chopped |
4 | green onion, chopped, divided |
1 clove(s) | garlic, chopped |
1 l | vegetable broth |
1 tsp | ginger, grated |
1 tbsp | lemon juice |
1 tbsp | red bell pepper, finely chopped |
2 tbsp | olive oil |
salt and freshly ground pepper, to taste |
Instructions
Heat oil in a large saucepan over medium heat.
Add 2/3 of the green onions and cook for 3 minutes. Then stir in ginger and garlic and cook, stirring, 1 minute more.
Add broth, zucchini and season with salt and pepper. Cover and cook for 10 minutes, until zucchini are very soft. Cool slightly and then stir in avocado.
Process soup, in batches, until smooth. Return to pan and heat through. Stir in lemon juice.
Garnish with red pepper and remaining green onions.
