Ingredients

3  carrot, peeled, sliced
10  onions, peeled, chopped
300 g brussels sprouts
1 medium sweet potato, peeled, chopped
1 tbsp olive oil
½ tsp dried thyme
salt and pepper, to taste
300 ml vegetable broth

Instructions

Preheat oven to 200°C.

In a mixing bowl, toss the vegetables with oil, thyme, salt and pepper.

Transfer vegetables to a roasting pan and add broth to pan. Roast for 45 minutes, stirring and turning carefully every 10-15 minutes.

When vegetables are almost tender, turn oven up to 220°C and roast 10-15 minutes more, until vegetables are lightly browned and tender.
