Autumn roasted vegetables recipe details
Ingredients
3 | carrot, peeled, sliced |
10 | onions, peeled, chopped |
300 g | brussels sprouts |
1 medium | sweet potato, peeled, chopped |
1 tbsp | olive oil |
½ tsp | dried thyme |
salt and pepper, to taste | |
300 ml | vegetable broth |
Instructions
Preheat oven to 200°C.In a mixing bowl, toss the vegetables with oil, thyme, salt and pepper.
Transfer vegetables to a roasting pan and add broth to pan. Roast for 45 minutes, stirring and turning carefully every 10-15 minutes.
When vegetables are almost tender, turn oven up to 220°C and roast 10-15 minutes more, until vegetables are lightly browned and tender.
