Asparagus with rhubarb sauce recipe details
Ingredients
2 kg | white asparagus, peeled and woody ends removed |
2 tbsp | sugar |
1 tsp | butter |
8 sprig(s) | thyme, chopped leaves |
250 g | rhubarb, diced |
2 | shallots, chopped |
2 tbsp | butter |
150 ml | dry red wine |
150 ml | vegetable stock |
1 tbsp | cornflour |
8 slice(s) | Parma ham |
Instructions
In a saucepan bring water with a good pinch of salt, sugar and a knob of butter to the boil. Add the the asparagus and cook for 10-12 minutes until done but still a bit firm to the bite.In a pan melt 2 tablespoons of butter and sauté the shallots and the rhubarb for a minute. Pour in the wine and the stock and bring to a boil. Reduce the heat and cook for 5 minutes. Mix together 3 tablespoons of water and the cornflour, stir this into the rhubarb sauce and cook for some more minutes. Season to taste with salt, pepper and thyme.
Drain the asparagus and serve immediately with the rhubarb sauce and Parma ham.
