Asparagus stuffed Meat Loaf recipe

Ingredients
3 stalk(s) | asparagus |
salt and pepper | |
150 g | cream cheese |
1 | egg |
500 g | beef mince |
2 tbsp | breadcrumbs |
2 tsp | mustard |
1 | onion, chopped |
1 clove(s) | garlic, chopped |
1 tbsp | oil |
1 | egg yolk |
Instructions
Cook the asparagus in salted water for 7 minutes. Drain and chill under cold water.
Mix the mince with breadcrumbs, egg and mustard. Season with salt and pepper. Spread a sheet of cling film on the working place and flatten the mince mixture on top of the foil to a rectangle.
Mix the egg yolk with the cream cheese. Season with salt. Spread the mince mixture with the cream cheese. Top with the asparagus and roll up with help of the foil.
Transfer onto a lined baking tray. Roast in the preheated oven at 180°C for 45 minutes until golden browned.
