Asparagus in pepper sauce recipe details
Ingredients
500 g | asparagus, trimmed, washed |
4 large | red bell peppers, washed, seeded, chopped |
3 ½ tbsp | olive oil |
1 tbsp | balsamic vinegar |
½ tsp | fresh thyme leaves |
salt and pepper, to taste |
Instructions
Cook the asparagus in lightly salted water for 8-10 minutes or until fork tender but stiil firm. Drain setaside.Rub the peppers in olive oil and broil on all sides. Place the cooked peppers in a paper bag and let steam for 10 minutes.
Remove the peppers and rub off the skins.
Puree the peppers in a blender. Mix in the olive oil, balsamic vinegar and thyme and process again until combined.
Divide purée among 4 serving dishes and then top with asparagus.
