Ingredients

500 g asparagus, trimmed, washed
4 large red bell peppers, washed, seeded, chopped
3 ½ tbsp olive oil
1 tbsp balsamic vinegar
½ tsp fresh thyme leaves
salt and pepper, to taste

Instructions

Cook the asparagus in lightly salted water for 8-10 minutes or until fork tender but stiil firm. Drain setaside.

Rub the peppers in olive oil and broil on all sides. Place the cooked peppers in a paper bag and let steam for 10 minutes.

Remove the peppers and rub off the skins.

Puree the peppers in a blender. Mix in the olive oil, balsamic vinegar and thyme and process again until combined.

Divide purée among 4 serving dishes and then top with asparagus.
