Aromatic glutinous rice details
INGREDIENTS:Serves 3-4
(A)
400g glutinous rice, soaked for 5 hours and drained
2 tbsp cooking oil
1 tbsp chopped garlic and shallots
(B) Seasoning:
2 tbsp oyster sauce
2 tbsp light soy sauce
½ tbsp dark soy sauce
1 tsp sesame oil
½ tsp salt
1 tsp chicken granules
Pepper to taste
50ml water
(C)
2 tbsp cooking oil
2 tbsp chopped garlic and shallots
30g dried shrimps, soaked
2 chinese sausages, diced
5 chinese mushrooms, soaked and diced
(D) Topping
1 stalk spring onion, diced
2-3 shallots, sliced and fried till crispy
Method:
- Heat oil in (A) and fry chopped garlic and shallots until fragrant. Add glutinous rice and continue to fry. Season with ingredients (B).
- Taste and dish on to a heatproof plate. Steam over rapid boiling water for 1-1½ hours or until rice is fully cooked.
- Heat up oil in (C). Fry chopped garlic and shallots until fragrant. Add dried shrimps and stir-fry until fragrant. Add diced sausages and diced mushrooms. Continue to fry. Add cooked glutinous rice and stir well.
- Dish up. Sprinkle diced spring onion and fried shallots on to glutinous rice and serve hot.
