Apricot tart with plum sauce recipe details
Ingredients
For the tart:: | |
300 g | flour |
200 g | cold butter flakes |
1 | egg yolk |
100 g | sugar |
salt | |
3 tbsp | water |
500 g | apricots |
For the plum sauce:: | |
500 g | plums |
100 g | sugar |
2 tsp | cinnamon powder |
Instructions
Combine in a bowl flour, butter, egg yolks, sugar, salt and water and knead until smooth. Place the shortcrust pastry into the fridge for at least 2 hours.Halve the apricots and remove the stones.
Preheat the oven to 200°C.
Grease a baking pan with butter and line the pan with the pastry. Pull up the edges approximately 1cm. Pierce the base several times with a fork. Divide the apricots skin side up on the base. Bake in the preheated oven for 25-30 minutes.
In the meantime pit the plums. Place the plums with the sugar into a small saucepan and bring to a boil, stirring frequently. Switch off the hotplate and allow the plums to soak for 5 minutes. Purée the plums, season with cinnamon and allow to cool.
Cut the tart in 12 pieces and serve on the plates garnished with plum sauce.
