Apricot fritters recipe details
Ingredients
400 g | canned apricots, juice reserved |
50 g | sugar |
oil for deep frying | |
For the Batter: | |
120 g | bread crumbs |
2 medium | eggs |
240 ml | milk |
100 g | flour |
1 tsp | baking powder |
salt and pepper, to taste |
Instructions
Combine juice and sugar in a saucepan and cook until syrup is thick and clear.Mix all ingredients for the batter together and beat with an electric mixer until batter has the consistency that it can be dropped from a spoon.
Dip each piece of the apricot in the batter, and fry until a golden brown.
Drain, and serve with the syrup.
