Apple custard rice pie recipe details
- Ingredients
- 2 cups uncooked rice
- 1 large tart baking apple
- 1 cup dried mixed fruit with raisins
- 1/2 teaspoon allspice
- 1 teaspoon cinnamon
- 1 cup maple syrup
- 1/3 cup brown sugar
- 1 cup water
- 2 teaspoons orange juice (combined with lemon curd in small skillet over low heat)
- 1-1/2 Tablespoons lemon curd
- Custard mixture(Recipe follows)
Preheat oven (gas) to 375 degrees. Butter a 5 x 9-inch glass loaf dish. Combine rice, maple syrup, mixed fruit, and water in a 10-inch skillet and bring to a boil; cover and simmer for 15 minutes and set aside. Sprinkle brown sugar and cinnamon on bottom of dish. Arrange 1/2 apple wedges over this mixture and sprinkle with brown sugar and cinnamon. With a slotted spoon, put rice mixture over the apples and press down firmly.
Arrange remaining apples over rice mixture. Pour custard mixture over apples and sprinkle with allspice and bake until firm to the touch — approximately 1 to 1-1/2 hours. Let cool slightly, cut into thin slices, serve on a plate napped with the orange/lemon sauce, and garnish with orange, lime and mint sprigs.
