American beauty cheesecake recipe details
Ingredients
For the Base: | |
175 g | digestive biscuits, crushed |
60 g | unsalted butter, melted |
For the Filling: | |
125 g | unsalted butter |
85 g | caster sugar |
1 tsp | vanilla extract |
2 large | eggs, separated |
1 large | lemon, juice only |
4 tbsp | double cream |
500 g | mascarpone cheese |
fresh raspberries, for topping, optional | |
icing sugar, for decoration |
Instructions
Preheat the oven to Gas Mark 3, 170°C, 325°F.Grease the sides of an 8-inch, 20cm springform cake tin. Line the base with baking parchment.
Mix the base ingredients together in a bowl until well coated. Press firmly into the base of the tin. Chill until required.
To make the filling:
Cream the butter and sugar together with the vanilla until light and fluffy. Beat in the egg yolks and lemon juice. Add the cream and mascarpone. Beat well until light.
Whisk the egg whites until just stiff and fold into the cheese mixture. Pour into the base and level the surface.
Bake for 1¼-1½ hours. Once cooked, turn off the oven and leave the cake within to cool, with the door slightly ajar.
Once cool, slide a knife around the edge of the tin. Carefully remove the tin sides and slide the cake from the tin base to a serving plate. Dust with icing sugar before serving.
Serve sliced with fresh raspberries or a cherry compote.
