Asparagus Soup With Spinach

300 g asparagus
1 onion
1 garlic clove
2 tbsp olive oil
100 g baby spinach spinach is optional
800 mL vegetable broth
salt
pepper
lime juice lime juice is optional
1 tbsp sour cream sour cream is optional

Directions

Cut the onion, garlic and asparagus on small pieces. From the asparagus leave the tops aside.
In a pot melt the olive oil and butter.
Mark as complete

Fry briefly the tops of the asparagus. Take them out and place them aside.
Put the onion in the oil and butter. Fry on medium heat until it becomes golden.
Mark as complete

Add the garlic and asparagus. Mix nicely until you start smelling the garlic.
Add spinach. Briefly mix.
Mark as complete

Add the water and vegetable broth. Bring to boil, and then cook on medium heat for about 30 min.
Remove the pot from heat.
Mark as complete

Using a hand blender, blend the soup until it becomes smooth.
If using lime juice, at this stage add it to the soup.
Mark as complete

Divide the soup in 4 bowls. Add 1 tbsp sour cream. On top add the asparagus tops.
Serve warm.
