1 Onion, chopped

800 ml Vegetable broth

Cut the onion, garlic and asparagus on small pieces. From the asparagus leave the tops aside. |

In a pot melt the olive oil and butter. |

Fry briefly the tops of the asparagus. Take them out and place them aside. |

Put the onion in the oil and butter. Fry on medium heat until it becomes golden. |

Add the garlic and asparagus. Mix nicely until you start smelling the garlic. |

Add spinach. Briefly mix. |

Add the vegetable broth. Bring to boil, and then cook on medium heat for about 30 min. |

Remove the pot from heat. |

Using a hand blender, blend the soup until it becomes smooth. |

If using lime juice, at this stage add it to the soup. |

Divide the soup in 4 bowls. Add 1 tbsp sour cream to each bowl. On top add the asparagus tops. |
