Ingredients

300 g Asparagus
1 Onion, chopped
1 Garlic clove
2 tbsp Olive oil
100 g Baby spinach Optional
800 ml Vegetable broth
Salt
Pepper
1 Lime juice Lemon, also optional
Sour cream

Cut the onion, garlic and asparagus on small pieces. From the asparagus leave the tops aside.

In a pot melt the olive oil and butter.

Fry briefly the tops of the asparagus. Take them out and place them aside.

Put the onion in the oil and butter. Fry on medium heat until it becomes golden.

Add the garlic and asparagus. Mix nicely until you start smelling the garlic.

Add spinach. Briefly mix.

Add the vegetable broth. Bring to boil, and then cook on medium heat for about 30 min.

Remove the pot from heat.

Using a hand blender, blend the soup until it becomes smooth.

If using lime juice, at this stage add it to the soup.

Divide the soup in 4 bowls. Add 1 tbsp sour cream to each bowl. On top add the asparagus tops.
