Ingredients

2 medium sized onions
1 garlic clove
3 medium sized carrots
2 canned lentils use 2 tins of 400 g each
salt and pepper
3 tbsp olive oil

Directions

1.

Preparation:

Peel the onion, the garlic and the carrots.
Cut the onion and garlic in small pieces, and the carrots in circles.
Mark as complete

In a pot add 3 tbsp olive oil and heat it. Add the onion and fry it until it becomes golden. Add the garlic and stir until it starts smelling.
Add the carrots and fry for a few minutes on medium heat.
Mark as complete

Pour the contents of 1 tin of lentil (with the water) in the pan. Cook for 15 minutes on medium heat. Add salt and pepper to taste.
Add the other tin of lentil (with the water) to the pot. Cook for 30 more minutes.
Mark as complete

Lentil soup can be eaten as a main vegetarian dish or, in smaller portions, as a soup.
