Ingredients
2 Tablespoons butter
1/3 cup brown sugar
2 cups chopped mango (about 3 medium)
2 Tablespoons lemon juice
1/4 cup shortening
3/4 cup sugar
1 egg
1-1/4 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
Instructions:

Heat oven to 350 degrees. Melt butter in a 7 x 11-inch or 8 x 8-inch pan. Sprinkle with brown sugar. Top with the mango mixed with the lemon juice. In a bowl, cream shortening and sugar, then beat in egg. In a separate bowl, combine flour, baking powder, and salt. Add flour mixture to shortening mixture alternately with the milk.

Spread batter over mango and bake 45 to 55 minutes or until lightly browned. Cool about 10 minutes on wire rack, then invert on serving plate. May also be served like a cobbler. Cut into squares and serve warm.

Serves: 9 to 10, depending on pan chosen.
