Ingredients for the recipe

1 lb pork (can be minced)
beaten egg (one)
1 lb (can be minced lamb or veal)
12 oz suet (shredded)
2 cups of breadcrumbs (fresh)
lemon zest (use 1 lemon)
1 tbps of fresh herbs or 1 tsp of dried ones
1 tsp grated nutmeg
1 tsp of sage (fresh chopped)
add salt and black pepper to your own taste
a sprinkle of flour (for coating)
oil for frying (can be lard or pig fat)

Recipe instructions

  1. Take a bowl and mix the following ingredients: (minced) meat, add suet, add breadcrumbs, add zest of a lemon, add nutmeg and herbs.
  2. Break the egg and stir it into the mix, mix well.
  3. Now use some flour to coat your hands and start shaping the mixture into smaller pieces. The piece should be in the shape of a sausages. After all, we are making sausages.
  4. Make sausages in the shape of a letter “C”. Sprinkle sausages with some extra flour.
  5. Use a pan, add frying oil (be it lard or pig fat or any high-temperateure oil) and grill the sausages for about 5-10 minutes (depending on the heat used). The sausages should be thoroughly cooked. If unsure you can split one sausage in the pieces and check if the meat is done. Serve with Oxford Sauce and enjoy.
