A rich, flavorful marinade that compliments almost any meat.
Ready in: 4 hours 25 mins

Ingredients

Makes: 2 cups
  • 1/4 cup butter
  • 1 tablespoon chopped garlic
  • 2 bay leaves
  • 3/4 cup olive oil
  • 1/2 cup sweet Marsala wine
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon freshly ground sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon parsley flakes
  • 4 chicken breasts (also good with pork chops)

Preparation method

Prep: 5 mins | Cook: 20 mins | Extra time: 4 hours, marinating

1. In a small sauce pan, over medium-low heat, melt enough butter to cover the bottom to about 1/4 inch. Add garlic and bay leaves. When garlic is browned slightly, reduce heat to low and add remaining butter.
2. While butter is melting, pour olive oil, wine, sesame oil and soy sauce into a container that can be sealed. Add salt, pepper and parsley flakes. Stir.
3. When butter has clarified, add to the container.
4. Add meat to the container and place in refrigerator. Turn meat every half-hour or so for at least four hours. (The longer the better. Overnight is great!)
5. When ready to cook, preheat grill to medium-high heat.
6. Grill meat, using remaining marinade as a baste while cooking.
