Ingredients

6 clove(s) fresh garlic
1  egg yolk, raw
5 tbsp extra virgin olive oil
1  egg yolk cooked

Instructions

In a mortar, crush the garlic into a fine paste. Add the egg yolks and salt lightly. Mix in the olive oil very slowly until you obtain a smooth paste.

Cover and chill well.

Serving suggestion:Serve it with shrimp, crudités (vegetable nibbles) or artichoke leaves.

Note:This Provencal garlic sauce is like a mayonnaise, to be served on a variety of dishes.
