Peanut brioche with avocado recipe details
Ingredients
50 g | peanut butter |
2 | egg whites |
40 g | peanuts, salted and ground |
12 slice(s) | brioche, 3cm in thickness, 2.5cm in diameter |
1 tbsp | butter |
1 | avocado, mature |
salt and pepper | |
sugar | |
sweet chili sauce | |
1 | bell pepper, red, seeded and diced |
Instructions
Melt the peanut butter and whisk in the egg whites and the ground peanuts, until smooth.Take for each portion three slices of the brioche, spread the mixture in between the slices piling the slices on top of each other. In a skillet shortly fry the pile in butter, turning once, so that the lowest and the topmost slices are browned.
Peel the avocado and remove the stone. Spoon the avocado flesh into a bowl and season with salt, pepper, sugar and sweet chili sauce. Mash the mixture until creamy, then add in the bell peppers.
Scoop out small heaps and place them on top of the still warm peanut brioches and serve immediately.
