Gingered melon with coconut recipe details

Ingredients

600 g melon: watermelon, cantaloupe, honeydew
80 g shredded coconut
180 ml water
90 g granulated sugar
4 tsp lemon juice
3 tsp fresh ginger, chopped
2 tsp grated lemon zest

Instructions

Combine water, sugar, lemon juice, and ginger in a saucepan over medium heat. Bring to a quick boil and then reduce heat to low. Cook, uncovered, for 5 minutes. Remove from heat and stir in grated lemon zest. Let cool to room temperature.

Strain off and discard the ginger and grated lemon zest.

Prepare melons. Cut into small chunks and place in a bowl. Pour approximately 3/4 of the ginger syrup over the melon, stirring gently to coat. Cover and refrigerate for 2 hours.

To serve, spoon melon balls into individual dessert dishes and sprinkle with coconut.
