Ingredients

500 g sugar
500 ml water
2  oranges, juice and grated rind
2  lemons, juice and grated rind
2 medium eggs, whites only
1 shot(s) rum
1 tsp vanilla extract

Instructions

Boil 250 g of the sugar in 380 ml of the water with a tiny bit of grated orange and lemon rind. Stir well until sugar is dissolved.

Remove the syrup from the fire, add the orange and lemon juice and transfer the mixture to an ice cream machine to chill it.

Set the remaining sugar and water to boil with the vanilla, and cook it until only little liquid remains. Set aside.

Whip the whites until stiff and then combine with the cooled syrup to make a frosting. Once cooled, mix it into the mixture in the ice cream machine. Last, stir in the rum.
