Ingredients

For the flan:
100 g dark chocolate
500 ml milk
2  egg yolks
2 tbsp sugar
40 g cornstarch
For the batter:
60 g chocolate chips
250 g wheat flour
3 tsp baking powder
1  egg
125 g sugar
1 tbsp vanilla sugar
125 g soft butter
250 ml milk
150 g dark chocolate coating,
70 g white chocolate coating

Instructions

For the flan:

Mix the cornstarch with 100 ml of milk.

Whisk the egg yolks with the sugar until frothy.

In a saucepan heat the remaining milk, take from heat and add the chocolate. Stir until the chocolate has melted. Return to the hob, add the cornstarch mix and bring to the boil. When thickened, take from heat and stir in the egg mixture. Fill into a bowl, cover the surface with cling film and leave to cool.

Preheat the oven to 200°C.

For the batter:
Mix flour, baking powder and half of the chocolate chips.
In another bowl, whisk the egg with sugar, vanilla sugar, butter and milk. Combine the mixture with the flour mixture.

Spoon half of the batter into a 12 cup muffin tin. Spread 1 teaspoon of the chocolate flan onto each. Sprinkle the remaining chocolate chips over the flan and cover with the remaining batter.

Bake at 180°C on the middle rack for about 20 minutes. Let rest for about 5 minutes, then remove from the baking tin and let cool.

Melt both coatings separately in a water bath. Dip the Muffins top first into the dark chocolate coating. Drain and garnish with the white chocolate coating.
