Ingredients

500 g red plums
600 ml water
200 ml buttermilk
200 ml fruity white wine
100 g soft brown sugar
1 tbsp lemon juice
1 pinch(es) ground cloves
½ tsp grated lemon peel
6  lemon peel strips

Instructions

In a large saucepan, combine plums, water, wine, sugar, lemon juice and cloves. Bring to a boil and simmer gently over low heat for 10 minutes or until the plums are very soft.

Pass through a sieve into a bowl. Chill and place into the fridge until completely cold.

Stir in the buttermilk and the grated lemon peel. Freeze the soup for 2 hours before serving.

Serve ice-cold in small soup bowls or dessert glasses, garnished with the lemon peel strips.
