Cheesecake with bananas is a delightful dessert that combines the creamy richness of cheesecake with the natural sweetness of ripe bananas. This recipe is perfect for those who love the classic combination of banana and cream cheese. Ingredients

For the dough:
300 g flour
2 tsp baking powder
200 g sugar
3  eggs
250 g soft butter
250 g curd cheese
125 ml banana juice
100 g grated hazelnuts
For the topping:
12 leaves gelatin
750 g curd cheese
250 ml banana juice
100 g sugar
3  bananas
4 tbsp lemon juice
250 g whipping cream
To garnish:
2  bananas
2 tbsp lemon juice
chocolate flakes

Instructions

For the dough:
Combine the flour and the baking powder and sieve into a bowl. Add sugar, eggs, butter, curd cheese, banana juice and hazelnuts. Mix with a hand blender until smooth and well combined.

Preheat the oven to 180°C.

Spread the dough on a greased baking tray and flatten. Bake the cake base in the preheated oven for approximately 25 minutes.

Transfer the baking tray on a wire rack and leave to stand until the cake base is cold. Place a cake frame around.

For the topping:
Soak the gelatin. Mix the curd cheese with the banana juice and the sugar. Slightly squeeze the gelatin and dissolve in a small saucepan. Stir into the gelatin some of the curd cheese mixture. When well combined, stir this into the remaining mixture. Peel the bananas and halve lengthwise , then cut into small slices. Sprinkle the banana slices with lemon juice and gently fold in the curd cheese mixture.

Whisk the whipping cream until stiff, then fold into the mixture as well. Divide the mixture on the cake base and flatten. Leave the cake in a cool place for 1-2 hours, then cut the cake in approximately 24 pieces.

To garnish:
Peel the bananas and cut into slices. Sprinkle with lemon juice and toss gently. Garnish the cake with the banana slices and with chocolate flakes.
