Ingredients:
4 egg yolks, beaten
1/4 cup milk (room temperature)
1/4 cup water (lukewarm)
1 Tablespoon sugar
3/4 teaspoons salt (optional)
Rind of 1 lemon, grated
4 or 5 egg whites
2 Tablespoons butter
Instructions:

Preheat oven to 400 degrees. Combine yolks, milk, water, sugar, salt, and lemon rind. Beat egg whites until stiff and fold into the yolk mixture. Melt butter in heavy cast iron skillet. Pour the batter into the hot skillet and cook over low heat on top of the stove (with a lid on) for about 2 to 5 minutes to set up the batter. Place the skillet into the hot oven for about 7 minutes until it becomes a golden, puffy hat. It will likely fall, so don’t worry.

Serve at once with the traditional confectioners’ sugar and lemon juice or fireweed syrup. This would be excellent with apples (sauteed in butter) and a dollop of whipped cream! Be inventive, the choices are endless!
