Ingredients:
3 cups old-fashioned rolled oats (not quick cooking)
1 cup all-purpose flour
2 teaspoons cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1 cup margarine (room temperature)
1 cup peanut butter
1 cup packed light brown sugar
1 cup sugar
2 large eggs (room temperature)
1 teaspoon vanilla
1-1/2 cups semisweet chocolate chips
Instructions:

Preheat oven to 350 degrees. In large bowl, combine oats, flour, spices, and baking soda. Set aside.

In another bowl, cream the peanut butter, margarine, vanilla, and sugars until light and fluffy. Add eggs one at a time, mixing about 1 minute after each.

Add dry ingredients and mix thoroughly. Stir in chocolate chips. Drop by rounded spoonfuls onto greased cookie sheet. Bake about 15 minutes or until just slightly brown around the edges. Refrigerate and cover remaining dough.

Makes:5 dozen
