Grab your favorite apron and let's start.This classic Southern dish is for those who like appetizers with a twist. It is a superb appetizer for sure. Pimento cheese is spread on toast, accompanied by nice crispy bacon and some celery. Quite a strange mixture, but it does deliver. The sandwich can be grilled, too, but mostly this recipe is done using toasted bread. As for the bacon, any kind will do, but of course the higher quality bacon the more intense the taste. There will be a battle between strong cheese taste and bacon taste so make sure you test out a few ratios before serving this dish to others.

Zingerman's pimento cheese recipe details

Ingredients
Serves: 8- ½ pound sharp cheddar, coarsely grated (we use the two-year-old raw milk cheddar from Grafton Village)
- 1 cup mayonnaise (I prefer Hellmann’s up here: out West the same mayo is sold under the brand name Best Foods)
- ¼ cup diced roasted red peppers
- ¾ teaspoon olive oil
- ¼ teaspoon freshly ground Tellicherry black pepper
- Scant ¼ teaspoon cayenne pepper, or to taste
- Pinch coarse sea salt
- (optional) Bacon bits and / or celery bits
Preparation method
Prep: 5 mins1. Fold all the ingredients together in a mixing bowl.
2. Spread on toast or any kind of toasted bread. Optionally, make a sandwich out of it and toast it (in this case add bacon bits and / or celery in this step).
3. Sprinkle bacon and / or cuts of celery on top (for more intense and / or fresh taste).
4. Eat.
