Ingredients
6 medium | eggs, yolk only |
70 g | sugar |
170 ml | Marsala wine |
1 tsp | grated lemon peel |
350 ml | whipping cream |
1 pinch(es) | cinnamon, ground |
1 drop(s) | vanilla extract |
To serve: | |

Instructions
Place egg yolks, and sugar in a large bowl. Add grated lemon peel and cinnamon and vanilla extract to the yolk mixture. Pour in the Marsala wine.Half-fill a pot with water, bring the water to a simmer and reduce the heat to low. Either use a double boiler or set the pan or bowl containing the custard mixture over the water; the bottom of the bowl should not touch the water.
Whisk the custard mixture, but make sure that the water does not boil. This way you the mixture thickens evenly without curdling it.
Continue whisking for about 10 minutes, until the mixture triples in volume, froths up and becomes pale. Once you have the desired consistency, take the container out of the pot.
In another bowl whisk heavy cream until it forms soft peaks and add the whipped cream to the cooled custard and gently fold them together.
Ladle the zabaglione into individual dishes and if desired serve with whipped cream, strawberries and/or biscotti.
