Yellow butter cake recipe details
Ingredients
6 | eggs, yolks only |
240 ml | milk |
2 tsp | vanilla extract |
250 g | plain flour |
50 g | cornflour |
300 g | caster sugar |
4 tsp | baking powder |
¾ tsp | salt |
175 g | unsalted butter, softened and cut into small pieces |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°C.Lightly grease two 9-inch sandwich tins, 23 x4cm deep and line the bases with baking parchment. Then butter and flour the parchment.
In a bowl lightly beat the yolks with a quarter of the milk and the vanilla.
Combine the dry ingredients in a bowl and mix until blended. Add the butter and remaining milk and beat together. Increase beating speed to aerate the mixture and gradually add the egg mixture, beating well after each.
Divide the mixture between the tins and level the tops. Bake for 25-35 minutes or until a skewer inserted into the centre of the cakes comes out clean.
Place the cakes on a wire rack and allow to cool in their tins for several minutes then invert onto the rack to finish cooling.
To serve: use a frosting of choice as a filling between the layers, and to cover the top and sides.
About this recipe:
America has a preference for yellow cakes. These differ from most egg-based cakes in that they use only the yolks and not whole eggs. There are many recipes emanating from US sources that include 1 or 2 packs of yellow cake mix. Such mixes are exclusive to the US (and possibly Canadian) markets and are unavailable elsewhere. It may be possible to replace such cake mixes with this recipe as a substitute, probably avoiding some unwelcome food additives in the process.
