Woodruff sorbet recipe details
Ingredients
750 ml | dry white wine |
250 ml | sugar syrup |
1 bunch(es) | woodruff |
6 sheet(s) | gelatin |
60 g | liquid glucose |
Instructions
Gently shake the woodruff to get rid of any small animals. Mix the white wine and sugar syrup and bring to a boil. Take from heat, add the woodruff and allow to infuse for 10-20 minutes. Strain through a coffee filter.Soak the gelatin in cold water for 5 minutes. Squeeze out and dissolve in the still warm wine mixture. Stir in the glucose and freeze in an ice machine.
