Ingredients

5 tbsp butter
200 g Cheddar cheese, grated
80 g flour, all-purpose
2 tbsp cornmeal
1 large egg
30  almonds, sliced
some salt

Instructions

Combine butter, cheese, flour, and cornmeal and mix in a food processor until the mixture has the texture of wet sand. Add the egg and whisk until the dough is firm.

Scrape dough onto a sheet of cooking paper or parchment. Top with another equal-sized sheet of paper and pat dough into a 2 cm thick circle. Wrap in plastic and freeze for 15 minutes, or refrigerate up to 3 days.

Roll dough into a rectangle about 20 cm wide and 25 cm long. Paper must not crease. Return to freezer for 15 minutes.

Preheat oven to 180°C.

Peel off top paper and use a sharp knife to cut the dough into 30 strips, each about 1 cm and 12 cm long.

Place each strip on a large baking sheet and sprinkle with salt to taste. Use your fingers to round the top of each strip into a fingertip shape. Use a sharp knife to score knuckle lines in each finger, and then press an almond into the fingertip to create the nail.

Bake the fingers until an even light brown, about 15 minutes. Cool on rack.
