White wine ice cream recipe details
Ingredients
150 ml | sweet white wine, eg sauterne or Californian Zinfandel |
4 tbsp | caster sugar |
300 ml | double cream |
a variety of summer fruits, to serve, white and red currants, raspberries, blackberries etc |
Instructions
Pour the wine into a bowl with the sugar and whisk together until the sugar has dissolved. Gradually add the cream and whisk until it thickens and starts to hold it s shape.Pour into a rigid container and freeze for about 1½ hours. Remove and whisk for about 30 seconds or so to aerate and return it to the freezer. After another hour, remove and whisk again and return to freezer for another 1½ hours.
Serve in scoops in a glass with a mixture of rinsed and dried soft fruits splashed with a dash of the same wine.
