Ingredients
For the Crust: | |
150 g | ginger biscuits, crushed |
60 g | butter |
For the Filling: | |
300 g | white chocolate, grated |
400 g | cream cheese |
150 ml | crème fraîche |
1 tsp | vanilla extract |
Instructions
Line a 25cm cake tin with baking parchment.Crust:
Melt the butter in a small pan over low heat. In a bowl mix together melted butter and biscuit crumbs. Press the biscuit mixture over the base of the tin. Refrigerate.
Filling:
Melt grated chocolate in a bowl over simmering water. Remove from the heat and leave to cool.
Whisk together the cream cheese, crème fraiche and vanilla extract. Add the melted chocolate and mix well.
Take the biscuit crumb base from the fridge. Spoon the chocolate mixture into the crust and level with a spatula. Chill the white chocolate cheesecake overnight.
