Vanilla ice cream with raspberry recipe details
Ingredients
300 ml | milk |
1 | vanilla bean |
200 g | sugar |
3 | egg yolks |
250 g | fresh or frozen raspberries |
6 tbsp | water |
300 ml | whipping cream |
Instructions
Cut open the vanilla bean and scrap out the inside. Add that to the milk, together with the vanilla bean stick and pour into a heavy-based saucepan. Bring almost to the boil. Remove from heat and leave standing for 30 minutes. Remove Vanilla bean stick.Whisk the egg yolks with 80 g sugar until they are pale in color. Now slowly add the milk to the sugar mixture, stirring all the time.
Cook the mixture over low heat for 15 minutes, stirring all the time, until mixture thickens; be careful not to boil the mixture or it will curdle. Cool for at least 2 hours.
Meanwhile cook the raspberries with the 120 g sugar and the water for 5 minutes. Pass the raspberries through a sieve to remove the seeds and leave to cool down.
Whip the cream and fold it into the milk mixture. Pour 1/3 of the milk mixture in a freezer-proof container then add some of the raspberry syrup; add again 1/3 of the milk mixture and some of the raspberry syrup and repeat. Freeze for 3-5 hours.
