Ingredients

115 g cream cheese
1 tbsp vanilla extract, or more
3 medium eggs, whites only
130 g granulated sugar

Instructions

Combine cheese and vanilla in a bowl and mix until evenly combined; reserve.

Simmer 2 cm of water in a medium pot. Place a bowl over simmering water and transfer sugar and egg white mixture into the pot. Whisk egg mixture continuously until it reaches 110°F, about 2 minutes, then remove from heat.

Transfer mixture into another bowl and beat with an electric mixer until doubled in volume, about 5-7 minutes. Add cheese mixture and beat just until smooth.

Cover mixture with plastic wrap and refrigerate until ready to use.
