Tamale pie recipe details
My family has been making this recipe as long as I can remember. Now that I have taken over a good part of the cooking I still think it is the best. Use polenta rather than finer ground corn meal. I sometimes add 1/2 cup whole kernel corn to the polenta.

Ingredients
Serves: 5- 3/4 cup polenta
- 3 cups boiling water
- 1 teaspoon salt
- 1 tablespoon oil
- 1 pound lean ground beef
- 2 small cloves garlic, chopped
- 1/2 cup finely chopped onion
- 1/2 cup chopped ripe olives
- 2 1/2 cups crushed canned tomatoes
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon oregano
- 1 3/4 teaspoons salt
- 1/8 teaspoon pepper
- 1/2 teaspoon ground cumin
- 1/2 cup seedless raisins
- 1/2 cup grated Cheddar or American cheese.
Preparation method
Prep: 1 hour | Cook: 45 mins1. Sift polenta into boiling water in top pan of double boiler. Cook over direct heat stirring constantly until thickened. Place pan over boiling water in the double boiler and cook for 20 to 30 minutes, stirring frequently. Allow Polenta to cool slightly.
2. Turn into greased 8 cup baking dish. Pat evenly around sides and bottom of dish. Refrigerate until ready to use.
3. Preheat oven to 375 degrees F (190 degrees C).
4. Heat oil in skillet and cook beef until gray. Drain off any excess fat. Add rest of ingredients except cheese. Cook about 15 minutes until liquid is partially evaporated.
5. Turn into prepared baking dish and sprinkle with cheese.
6. Bake in the preheated oven until heated through and cheese is melted, 45 to 50 minutes.
