- Ingredients
- 2 pounds sweet potatoes (cooked, skinned)
- 1/3 cup light brown sugar
- 1 stick (1/2 cup) butter, melted
- 3 eggs, well beaten
- 1 teaspoon vanilla
- 3 Tablespoons rum (dark)
- 3 teaspoons pumpkin pie spice
- 2 Tablespoons maple syrup
- 1/3 cup canned milk
- Topping Ingredients
- 1 cup light brown sugar
- 1/4 cup all-purpose flour
- 1/2 stick (1/4 cup) butter, melted
- 3/4 cup chopped pecans
Mash potatoes with potato masher, cut up butter, and use electric mixer to beat. Add sugar, vanilla, rum, spice, syrup and canned milk, beat well. At this stage, you may do next step or refrigerate for later. Put mixed ingredients in 15 x 9-inch greased Pyrex dish.
Topping: Mix together sugar, flour, butter and pecans, then drop teaspoonfuls on top of potatoes. Bake uncovered at 350 degrees for 25 minutes until it bubbles.
