Sundried Tomato and White Bean Salad recipe

Ingredients
200 g | dried white beans |
2 | onions, chopped |
1 clove(s) | garlic, mashed |
4 tbsp | tomato puree |
150 g | sundried tomatoes in oil, diced |
8 tbsp | oil from the tomatoes |
1 bunch(es) | parsley, chopped |
3 tbsp | white wine vinegar |
salt and pepper | |
1 tbsp | capers |
Instructions
Soak the beans in water for 12 hours. Cook the beans in fresh water for 1 hour or until tender. Drain.Pour the cooked beans into a salad bowl. In a pan, sauté the onion and the garlic in the oil of the sundried tomatoes. Stir in the tomato purée and cook for another minute.
In a bowl, add the mixture to the white beans, tomatoes, parsley and capers. Mix carefully and season to taste with salt, pepper and vinegar. Allow to steep for 1 hour before serving.
