Ingredients

200 g dried white beans
2  onions, chopped
1 clove(s) garlic, mashed
4 tbsp tomato puree
150 g sundried tomatoes in oil, diced
8 tbsp oil from the tomatoes
1 bunch(es) parsley, chopped
3 tbsp white wine vinegar
salt and pepper
1 tbsp capers

Instructions

Soak the beans in water for 12 hours. Cook the beans in fresh water for 1 hour or until tender. Drain.

Pour the cooked beans into a salad bowl. In a pan, sauté the onion and the garlic in the oil of the sundried tomatoes. Stir in the tomato purée and cook for another minute.

In a bowl, add the mixture to the white beans, tomatoes, parsley and capers. Mix carefully and season to taste with salt, pepper and vinegar. Allow to steep for 1 hour before serving.
