strawberry ice cream recipe details
Ingredients
125 ml | full-fat milk |
250 ml | double cream |
2 large | eggs, yolks only |
175 g | caster sugar |
450 g | strawberries, hulled and halved if very large |
1 tbsp | granulated sugar |
4 tbsp | water |
1 tsp | freshly squeezed lemon juice |
Instructions
Place the strawberries, granulated sugar, lemon juice and the water into a sauce pan and heat gently on a medium heat until the sugar has dissolved and the fruit is just beginning to soften. Remove from heat and allow to cool. Pass the fruit pulp through a medium-fine sieve, using the back of a spoon to assist. Retain as much of the pulp as possible and discard the seeds and other remaining solids. Set aside to cool.Place the milk and cream in a clean saucepan and heat over a medium heat until near to boiling.
Beat the sugar and egg yolks in a bowl and add to the hot milk mixture, whisk for a few seconds and return to the pan and continue heating until the mixture thickens. Add the fruit purée to the mixture and mix well.
Chill until cold and then pour into a freezer-proof container and freeze for 1-2 hours until almost set. Remove and turn out mixture into a bowl. Whisk until soft and refreeze until firm.
Options:
Add a few drops of red food colouring, if desired, for a stronger colour.
Replace strawberries with fresh or frozen raspberries, but prepare in exactly the same manner.
